'We want people to come on in and check things out,' Haskell says.
Haskell believes that restaurant will differ from others in the Downtown Bangor area. He says that while those restaurants are doing a 'fantastic job,' Blaze will bring something new to the table.
'No one is cooking with wood,' Haskell says. 'I think every angle is unique.'
Haskell says that the restaurant has a wide-ranging menu.
'We try to focus on local, sustainable food,' says Haskell. Dishes range from artisan tacos to pizzas and even raw seafood. Blaze also has gluten-free and vegetarian items. According to Haskell, Blaze also has a wide range of beverages. He says that one of the food items that is popular is the Belgian cut French fries that have been fried in duck fat. Haskell summed up the menu by saying that they try to stick to foods that are 'local, fresh and sustainable.'
The grand opening of Blaze comes later than expected, but Haskell believes that they did not face any challenges out of the ordinary.
'It was a lot of work... but it's an old building. It is what it is,' Haskell says.
Haskell also owns Blaze in Bar Harbor. He stated that the location in Bangor will be a bigger realization of the concept behind the Bar Harbor location. Haskell says that Blaze in Bangor will also be open year-round.
'We learned a lot [from the Bar Harbor location] on how to make things better. We want [this location] to be an expanded version of that,' Haskell says.
Blaze will be open at 11 a.m. Monday through Friday and close between 9 and 10 p.m. On Saturday and Sunday, they will be open at 9:30 a.m. for brunch and close between 9 and 10 p.m. If you would like more information about Blaze, you can like them on Facebook.
